Each pound of egg-pasta has a minimum of 3 cage free eggs, which have higher levels of Omega 3 and about 30% less cholesterol than regular eggs. For all the vegetarians we also make our pastas without egg.
For us is important to follow Old World artisanal traditions. So we start the preparation of our pastas with a vintage machine imported from Italy, and finish the detailing by hand. Also, we aspire to craft edible creativity so, we'll put a spin on the classics and infuse them with modern flavors.
Fettuccine all'uovo (Egg fettuccine)
As simple as it gets, this pasta relies on the quality and freshness of its ingredients. Merely serving with a dash of butter and parmesan cheese, will already convince you that there is no going back to dry pasta or other "fresh" pasta supermarket brands. The fettuccine is extruded through our vintage italian machine, which gives it a distinctive more absorbent surface texture, so works incredibly with cream sauces. Farrah's Sea Shells (Made with or without egg)
Made with our Semolina flour dough, these shell shaped short pastas are one of the best for trapping chunky sauces and are also great for pasta salads. Kids, like my niece Farrah, will love these too, since it will take them to an imaginary trip to the beach. CLICK TO ORDER!
Rotini (spirals)
Made with our Semolina flour dough, Rotini originated from Northern Italy and the tight twists help them retain a wide variety of sauces better. They are often used in pasta salads with pesto or tomato-based sauces.
Whole Wheat with Flax Fettuccine (Higher Omega 3 content!)
Our signature whole wheat pasta, is made with 100% organic stone ground wheat flour, a small amount of semolina flour, and 100% organic milled flax seeds. Most importantly, our flour is stone-ground which produces several advantages. The endosperm, bran, and germ remain in their natural, original proportions. Because the stones grind slowly, the wheat germ is not exposed to excessive temperatures which causes the fat from the germ portion to oxidize and become rancid and much of the vitamins to be destroyed. Nutritive losses due to oxygen exposure are also limited by the fact that stone-ground flour is usually coarser. You'll love our whole wheat pasta for its texture, nutritive value, sweet and nutty flavour.
La Suegra's Pesto:
A recipe that zelously passed down the family grapevine for generations, luckily made into my "suegra's" hands! So, now we will be sharing it with you. This pesto is a flavorful combination of ingredients; fresh local basil, garlic, organic pine nuts, extra virgin olive oil, Parmegiano Reggiano cheese, Peccorino Cheese, Sea salt and freshly ground black pepper. Pesto Rosso (Sundried Tomato Pesto):
Though people commonly associate the word pesto with the green garlic-and-basil sauce from Liguria, the word derives from the verb pestare, to step on or grind, and therefore applies to any sauce made from ground ingredients. In this case, sun-dried tomatoes, roasted almonds, garlic, extra virgin olive oil, local basil, salt and cracked black pepper.
